- 1 tube refrigerated sugar cookie dough, 16.5 oz
- 8 oz cream cheese, softened
- 2/3 cup sugar
- 1 teaspoon vanilla
- 8 oz whipped topping, thawed
- 12 oz fresh raspberries, 3 to 4 cups
- 1 dry pint fresh blueberries, about 2 cups
- Heat the oven to 375 degrees.
- Remove the cookie dough from the package and cut it into 1/4-inch rounds.
- Set the dough slices on a lightly greased 12-inch pizza pan, then press them together into one even crust. Save one slice to bake separately for a star decoration, if you like.
- Bake the crust for 11-12 minutes, until the edges and top are lightly golden. Let it cool fully, and wash and dry the berries during this time.
- Beat the softened cream cheese with the sugar and vanilla until the mixture looks smooth.
- Mix in half of the thawed whipped topping, then gently fold in the rest until creamy.
- Spread a little less than half of the cream cheese mixture over the cooled cookie crust, covering it to the edge.
- Arrange blueberries around the outside of the pizza, then fill the upper-left area to form the blue flag section. Add the star cookie on top, if using.
- Place raspberries in seven red rows across the pizza.
- Pipe the remaining cream cheese mixture between the raspberry rows to make the white stripes.
- Chill in the refrigerator until serving.
Notes
- Dry the berries well before decorating so the topping stays neat.
- The cookie crust must be completely cool before the cream cheese layer goes on.
- A star tip gives the white stripes a pretty texture, but a small cut corner on a plastic bag also works.
- Keep leftovers refrigerated and enjoy within 1 to 2 days for the best berry texture.
