Red, White and Blue No-Bake Cheesecake is a chilled parfait dessert layered with cookie crumbs, lemony cream cheese filling, blueberries, whipped cream, and candy stars.

  • Red sprinkles
  • 2 (8-oz.) packages cream cheese
  • 3 Tablespoons heavy cream
  • 5 Tablespoons sugar
  • 2 teaspoons fresh lemon juice
  • 2 1/2 teaspoons lemon zest
  • 1 Tablespoon vanilla extract
  • 1 1/2 cups crushed red velvet cookies
  • 1 1/2 cups blueberries
  • 1 cup store-bought or homemade whipped cream

Instructions

  1. Cover a baking sheet with wax paper. Warm the red candy melts as directed on the package, then pipe small star shapes with a 1 1/2-inch stem beneath each one so they can sit in the cream later. Scatter red sprinkles over the stars right away, then let them firm up fully in the refrigerator or at room temperature.
  2. Add the cream cheese, heavy cream, sugar, lemon juice, lemon zest, and vanilla extract to the bowl of a stand mixer with the paddle attached. Beat until the mixture looks smooth, thick, and creamy, then spoon it into a piping bag or a sealable plastic bag.
  3. Spoon crushed red velvet cookies into the bottom of each serving glass. Pipe the cheesecake filling over the crumbs, add blueberries, and finish each cup with whipped cream.
  4. Gently lift the hardened candy stars from the wax paper with an offset spatula. Place one star on top of each parfait and serve right away.

Notes

  • A piping bag or sealable plastic bag helps make clean, pretty layers.
  • Red Velvet Oreos are a great choice for the cookie crumbs, but another red cookie can be used.
  • For the neatest texture, keep the parts separate and assemble the parfaits close to serving time.
