- Heat the olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook for 3 to 5 minutes, turning occasionally, until the edges are lightly browned. Move the sausage to a plate.
- Add the chopped onion to the same skillet and cook for 2 to 3 minutes, until it softens. Stir in the garlic and cook for about 30 seconds, then add the orzo and stir for 1 minute to lightly toast it.
- Pour in the chicken broth and scrape the bottom of the pan to loosen the browned bits. Mix in the thyme, paprika, salt, and black pepper. Bring to a gentle simmer and cook for 8 to 10 minutes, stirring now and then, until the orzo is tender and most of the liquid is absorbed.
- Turn the heat to low. Add the heavy cream and shredded cheese, then stir until the sauce becomes creamy and smooth. Return the chicken sausage to the skillet and fold in the spinach or sun-dried tomatoes, if using.
- Take the skillet off the heat. Finish with parsley, extra cheese, and lemon zest, then serve while warm.
