- 1 medium yellow onion, diced
- 1 large green bell pepper, diced
- 1 lb ground breakfast sausage
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 teaspoon fine salt, divided
- ½ teaspoon black pepper, divided
- 6 slices cooked bacon, chopped, divided
- 2 cups shredded Colby-Cheddar or Colby-Jack cheese, divided
- 6 eggs
- 1 ¼ cups milk of choice
- 1 (28-ounce or two 16-ounce) package frozen tater tots or crispy crowns
- Optional for serving: sour cream, sliced green onions, hot sauce, additional bacon
- Heat the oven to 400°F. Coat a 9×13-inch baking dish with cooking spray.
- Place a large skillet or Dutch oven over medium-high heat. Spray the pan, then add the onion, bell pepper, and sausage.
- Cook for 8-10 minutes, stirring now and then, until the sausage is fully browned and the vegetables are just tender.
- Add the garlic powder, Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper. Stir until the seasoning is evenly mixed in.
- Fold in 4 slices of the chopped bacon, then spoon the sausage mixture into the prepared baking dish.
- Add 1 cup cheese and the frozen tater tots or crispy crowns. Gently stir and spread the mixture into an even layer.
- In a medium bowl or large measuring cup, whisk the eggs with the milk until smooth. Stir in the remaining ½ teaspoon salt and ¼ teaspoon black pepper.
- Pour the egg mixture evenly over the ingredients in the baking dish.
- Scatter the remaining 1 cup cheese and the remaining 2 slices of chopped bacon over the top.
- Bake for 25-35 minutes, checking at 25 minutes, until the middle is set and the top is lightly browned.
- For extra crisp edges, broil on High for 1-2 minutes, watching closely so the top does not burn.
- Serve warm with sour cream, green onions, hot sauce, or extra bacon, if desired.
Notes
- For an overnight version, prepare the casserole through the topping step. Cover and refrigerate it until morning.
- When ready to bake, heat the oven to 400°F and bake for 25-35 minutes, until the center is set.
- Frozen tater tots or crispy crowns can go straight into the dish without thawing.
