Steak Queso Rice is a creamy one-pan dinner loaded with tender beef, seasoned rice, and melted queso for a comforting Tex-Mex style meal.

  • 1 lb steak, thinly sliced (ribeye, sirloin, or flank steak)
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 cup white or brown rice
  • 2 cups beef broth
  • 1 cup queso blanco or any smooth melting cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro (optional)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and black pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced steak and cook for about 3 to 4 minutes until browned and fully cooked. Transfer the meat to a plate and set aside.
  2. Place the chopped onion and garlic into the same skillet. Cook for 2 to 3 minutes, stirring often, until softened and fragrant.
  3. Add the rice to the pan and stir for 1 to 2 minutes so it lightly toasts.
  4. Pour in the beef broth and season with cumin, chili powder, salt, and black pepper. Stir well, cover the skillet, and simmer on low heat for 15 to 20 minutes until the rice becomes tender.
  5. Mix in the queso blanco and sour cream until the rice is creamy and evenly coated.
  6. Return the cooked steak to the skillet and stir everything together. Warm for another 2 to 3 minutes.
  7. Top with chopped cilantro if desired and serve while hot.
