18 oz. wild Atlantic salmon, sliced into 3 oz. portions
2 garlic cloves, finely minced
2 Tbsp honey (42g)
1 Tbsp lemon juice
1/2 tsp salt
1/2 tsp black pepper
1 tsp olive oil
Instructions
Add the honey, lemon juice, minced garlic, salt, and black pepper to a small bowl, then whisk until smooth.
Set the salmon pieces inside a large resealable bag. Pour in the marinade, remove extra air from the bag, and seal it tightly. Turn the salmon gently so each piece is coated, then chill flesh-side down for 10-15 minutes.
Coat a large nonstick or cast iron skillet with cooking spray and warm it over medium heat. Pour in the olive oil, add the salmon flesh-side down, and sear for 4-5 minutes.
Notes
Use two batches if the skillet feels crowded, since tightly packed salmon may need extra cooking time.
