These Banana Oatmeal Bars are soft, chewy, and filled with ripe banana, oats, nut butter, and chocolate chips for an easy breakfast or snack.

Ingredients

  • 1½ cups mashed bananas, about 3 bananas
  • ½ cup nut butter
  • 2 cups rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 1 cup chocolate chips
  • ½ teaspoon salt

Instructions

  1. Heat the oven to 350°F and line a 9×9 baking pan with parchment paper.
  2. Place the mashed bananas, nut butter, oats, cinnamon, vanilla, maple syrup, chocolate chips, and salt in a large bowl.
  3. Mix until the oats are coated and the ingredients come together evenly.
  4. Spread the mixture into the prepared pan and press it into an even layer.
  5. Bake for 18 to 20 minutes, until the edges look lightly golden and the center is set.
  6. Cool completely in the pan before cutting into 16 bars.

Notes

  • Use very ripe bananas for the sweetest flavor and softest texture.
  • Let the bars cool fully before slicing so they hold their shape.
  • Store leftovers in an airtight container in the fridge for up to 5 days.
  • Freeze individual bars for up to 3 months and thaw before serving.
