- 1 tablespoon olive oil
- 2 tablespoons ghee or butter, divided
- 1 lb Yukon gold potatoes, cut into 1/2-inch cubes
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1 1/4 lb sirloin steak, cut into 1/2-inch cubes
- Fresh chopped parsley, for garnish
- Place a large cast iron skillet over medium heat. Add the olive oil with 1 tablespoon ghee or butter and let it melt.
- Add the cubed potatoes, then stir in the garlic, thyme, oregano, sea salt, and black pepper. Cook, stirring now and then, until the potatoes are browned on the outside and tender in the center. Transfer them to a plate.
- Raise the heat to medium-high and melt the remaining 1 tablespoon ghee or butter in the same skillet.
- Add the steak pieces in a single layer. Sear until browned, turning as needed, and cook to your preferred doneness.
- Return the potatoes to the skillet and toss everything together until warm and coated in the garlic butter. Sprinkle with parsley before serving.

- Cut the potatoes into small, even cubes so they soften quickly and brown evenly.
