- 2 lbs 80/20 ground beef
- 12 pack Hawaiian rolls
- 11 slices Colby Jack cheese or American cheese
- 1 large sweet onion, diced
- 24 dill pickles
- 6 tablespoons butter
- 1 teaspoon salt
- 1 teaspoon cracked pepper
- 1/2 cup mayonnaise
- 1.5 tablespoons ketchup
- 1 tablespoon yellow mustard
- 2 teaspoons pickled juice
- 1/4 teaspoon cayenne pepper
- Set the oven to broil.
- Cut the Hawaiian rolls in half across the middle, keeping each sheet of rolls attached. Arrange both cut sides facing up on a lined baking sheet.
- Melt 4 tablespoons butter and brush it over the inside of the rolls. Broil for 3-4 minutes, watching closely, until the bread turns lightly golden.
- Lower the oven temperature to 350 degrees.
- Place the ground beef in a large bowl with the salt and cracked pepper. Mix gently, then press the beef evenly into a 9×13 casserole dish.
- Bake the beef for 20 minutes.
- While the beef bakes, melt 1 tablespoon butter in a skillet over low heat. Add the diced onion and cook for about 15 minutes, stirring now and then, until soft and browned.
- Drain the cooked beef well and remove the juices from the pan.
- Place the toasted bottom rolls on a baking pan. Layer the dill pickles over the bread, then use two spatulas to move the beef slab onto the rolls.
- Add the cheese over the beef, spoon the onions evenly on top, and place the top rolls back over the filling.
- Melt the remaining 1 tablespoon butter and brush it over the tops. Add sesame seeds right away, if using.
- Bake for 15 more minutes, or until the cheese is fully melted and the sliders are hot.
- Stir together the mayonnaise, ketchup, yellow mustard, pickled juice, and cayenne pepper. Serve the sauce with the warm sliders.
Notes
- Add bacon, tomatoes, or pickled red onions for extra flavor. Keep lettuce on the side so it stays crisp.
- Ground turkey or ground chicken can be used instead of beef.
- Try pepper Jack, gouda, American cheese, or another melting cheese you enjoy.
