Hawaiian Roll Cheeseburger Sliders

Hawaiian Roll Cheeseburger Sliders bake into buttery, cheesy mini burgers with juicy beef, sweet rolls, pickles, and a creamy dipping sauce.

  • 2 lbs 80/20 ground beef
  • 12 pack Hawaiian rolls
  • 11 slices Colby Jack cheese or American cheese
  • 1 large sweet onion, diced
  • 24 dill pickles
  • 6 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon cracked pepper
  • 1/2 cup mayonnaise
  • 1.5 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 2 teaspoons pickled juice
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Set the oven to broil.
  2. Cut the Hawaiian rolls in half across the middle, keeping each sheet of rolls attached. Arrange both cut sides facing up on a lined baking sheet.
  3. Melt 4 tablespoons butter and brush it over the inside of the rolls. Broil for 3-4 minutes, watching closely, until the bread turns lightly golden.
  4. Lower the oven temperature to 350 degrees.
  5. Place the ground beef in a large bowl with the salt and cracked pepper. Mix gently, then press the beef evenly into a 9×13 casserole dish.
  6. Bake the beef for 20 minutes.
  7. While the beef bakes, melt 1 tablespoon butter in a skillet over low heat. Add the diced onion and cook for about 15 minutes, stirring now and then, until soft and browned.
  8. Drain the cooked beef well and remove the juices from the pan.
  9. Place the toasted bottom rolls on a baking pan. Layer the dill pickles over the bread, then use two spatulas to move the beef slab onto the rolls.
  10. Add the cheese over the beef, spoon the onions evenly on top, and place the top rolls back over the filling.
  11. Melt the remaining 1 tablespoon butter and brush it over the tops. Add sesame seeds right away, if using.
  12. Bake for 15 more minutes, or until the cheese is fully melted and the sliders are hot.
  13. Stir together the mayonnaise, ketchup, yellow mustard, pickled juice, and cayenne pepper. Serve the sauce with the warm sliders.

Notes

  • Add bacon, tomatoes, or pickled red onions for extra flavor. Keep lettuce on the side so it stays crisp.
  • Ground turkey or ground chicken can be used instead of beef.
  • Try pepper Jack, gouda, American cheese, or another melting cheese you enjoy.
