Healthy Tuna Melt Wrap with melted cheese and crispy tortilla

This Healthy Tuna Melt Wrap is warm, crisp, cheesy, and filled with a creamy tuna mixture for a quick satisfying lunch.

Ingredients

  • 1 5 oz can skipjack tuna, or yellowfin tuna
  • 2 tablespoons Greek yogurt
  • 1/2 tablespoon Dijon mustard, or regular mustard
  • Juice from 1/2 lemon, about 1 tablespoon
  • 1/4 cup corn
  • 1/4 cup diced red onion, about 1/4 of a red onion
  • 1 tablespoon dill relish, or capers
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 cup shredded mozzarella cheese, or preferred cheese
  • 1 wrap, at least 10 inches, burrito-sized
  • Olive oil, for cooking

Instructions

  1. Drain the tuna very well, then place it in a medium mixing bowl.
  2. Add the Greek yogurt, mustard, lemon juice, corn, red onion, dill relish or capers, garlic powder, and black pepper. Mix until the filling is evenly combined.
  3. Soften the wrap by covering it with a damp paper towel and microwaving it for 10 to 20 seconds.
  4. Lay the wrap on a flat surface. Add the shredded cheese near the lower edge, leaving room around the sides, then spoon the tuna mixture on top.
  5. Fold both sides inward, bring the bottom edge over the filling, tuck it snugly, and roll into a sealed wrap.
  6. Warm a skillet or grill pan over medium heat and add a small amount of olive oil.
  7. Place the wrap seam-side down in the pan and cook for 3 to 4 minutes, pressing gently as it browns.
  8. Turn the wrap over and cook for another 2 to 3 minutes, reducing the heat to medium-low if it browns too fast.

Notes

  • A burrito-sized wrap makes rolling easier and helps hold the filling in place.
  • For two smaller servings, split the tuna mixture between two standard tortillas.
  • Add extra lemon juice if the tuna mixture needs more moisture or brightness.
  • Use a cheese that melts smoothly, such as mozzarella or cheddar.
