Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 68 ounces each)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, finely minced
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon black pepper
  • 1 tablespoon milk, plus extra if needed
  • 4 slices sourdough, ciabatta, or brioche bread
  • 1 cup chopped romaine lettuce
  • 1/4 cup grated Parmesan cheese for topping
  • Optional toppings: sliced tomatoes, cooked bacon, avocado

Instructions

  1. Blot the chicken dry with paper towels before seasoning.
  2. In a small bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and black pepper.
  3. Coat the chicken evenly with the seasoning mixture.
  4. Warm a skillet over medium-high heat.
  5. Cook the chicken for 5 to 7 minutes on each side until fully cooked and the center reaches 165°F.
  6. Transfer the chicken to a plate and allow it to rest briefly.
  7. Slice the chicken thinly or pull it apart into shreds.
  8. To prepare the dressing, whisk together mayonnaise, Parmesan cheese, lemon juice, Dijon mustard, garlic, and Worcestershire sauce.
  9. Add black pepper and stir until creamy and smooth.
  10. Mix in milk gradually until the dressing reaches your preferred consistency.
  11. Adjust seasoning if needed and chill the dressing for extra flavor if desired.
  12. Toast the bread slices until lightly crisp.
  13. Spread dressing over two slices of bread.
  14. Layer the romaine lettuce over the dressing.
  15. Add the cooked chicken on top of the lettuce.
  16. Sprinkle with Parmesan cheese and add any optional toppings.
  17. Spread additional dressing on the remaining bread slices.
  18. Place the top bread slices over the filling with the dressing side facing down.
  19. Press lightly, slice if preferred, and serve right away.

Notes

  • Use grilled chicken instead of skillet-cooked chicken for a smoky flavor.
  • A pinch of red pepper flakes adds mild heat to the seasoning blend.
  • Pecorino Romano or Asiago cheese can replace Parmesan for a sharper taste.
  • Crushed croutons inside the sandwich create extra crunch.
  • Wrap the filling in a tortilla for an easy handheld variation.
  • Fresh lemon zest brightens the dressing nicely.
  • A small amount of anchovy paste gives the dressing a more traditional Caesar flavor.
  • The chicken and dressing can be made in advance and refrigerated separately until assembly.
