- 1 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 large eggs
- 2 cups panko breadcrumbs
- 1 cup grated parmesan cheese
- 1/4 cup neutral oil, such as vegetable oil, smooth olive oil, or avocado oil, plus more as needed
- 1 large head romaine lettuce, chopped into small pieces
- 1 cup croutons
- 1 cup shredded parmesan cheese, more if desired
- 1/2 cup Caesar dressing, store-bought or homemade
- 4 extra-large burrito-sized wraps
- Cut each chicken breast through the center lengthwise to make 4 thin cutlets.
- Flatten the chicken with a meat mallet or rolling pin until each piece is about 1/4-inch thick.
- Add the flour, salt, and black pepper to a shallow dish and stir to combine.
- Crack the eggs into a second shallow dish and whisk until smooth.
- Mix the panko breadcrumbs with the grated parmesan cheese in a third shallow dish.
- Coat each chicken piece in the seasoned flour, then gently tap off any excess.
- Dip the floured chicken into the beaten eggs until fully covered.
- Press the chicken into the panko mixture, making sure both sides are evenly coated.
- Warm the oil in a large skillet over medium-high heat.
- Fry 2 chicken pieces at a time for 4–5 minutes per side, until crisp, golden, and cooked through.
- Move the cooked chicken to a paper towel-lined plate, then cook the remaining pieces.
- Place the chopped romaine, croutons, shredded parmesan, and Caesar dressing in a large bowl and toss gently.
- Cut the crispy chicken into small bite-size pieces.
- Add the chicken to the Caesar salad mixture and toss just until combined.
- Divide the filling between the wraps, fold them tightly, slice in half, and serve.
