Blueberry French Toast Casserole

Blueberry French Toast Casserole bakes into a cozy make-ahead breakfast with soft bread, creamy filling, warm spice, and sweet berries.

  • 1 cup blueberries
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tbsp vanilla extract, divided between the filling and custard
  • 2 tbsp milk
  • 2 loaves cubed French bread
  • 1 cup blueberries
  • 1 tsp cinnamon
  • 2 cups milk
  • 8 large eggs
  • 1/2 tsp nutmeg

Instructions

  1. Beat the softened cream cheese with powdered sugar, 2 tbsp milk, and part of the vanilla until the mixture turns smooth and creamy. Gently stir in 1 cup blueberries.
  2. Place a layer of cubed French bread in a 10×14-inch baking dish. Spoon the cream cheese mixture over the bread, then cover it with the remaining bread cubes.
  3. Whisk 2 cups milk, 8 large eggs, the remaining vanilla, cinnamon, and nutmeg in a large bowl until blended.
  4. Pour the egg mixture over the bread so the pieces are evenly moistened. Scatter the remaining 1 cup blueberries over the top.
  5. Cover the dish with aluminum foil and refrigerate for 8 hours or overnight. Remove it from the refrigerator 30 to 60 minutes before baking.
  6. Preheat the oven to 375°F (190°C).
  7. Bake covered for 45 minutes. Remove the foil and bake for about 30 minutes more, until the middle is set and the top looks lightly golden.
  8. Let the casserole cool for a few minutes before serving warm.

Notes

  • Day-old French bread gives the casserole a better texture because it absorbs the custard without becoming too soft.
  • Use a buttered baking dish to help prevent sticking and make serving easier.
  • If using a 9×13-inch pan, the casserole may bake a little deeper and can need 5 to 10 extra minutes.
  • Leftovers can be covered and refrigerated for up to 3 days.
  • Reheat single portions in the microwave for 1 to 2 minutes, or warm larger portions covered in a 325°F oven for 15 to 20 minutes.
