This Cucumber Sandwich layers crisp English cucumber with a creamy herb spread for a cool, fresh bite that comes together fast.

Ingredients

  • 2 ounces cream cheese, softened to room temperature
  • 1 tablespoon low-fat plain Greek yogurt
  • 1 tablespoon fresh chives, thinly sliced
  • 1 tablespoon fresh dill, chopped
  • ¼ teaspoon ground pepper
  • 2 slices whole-wheat sandwich bread
  • ⅓ cup English cucumber, sliced very thin

Instructions

  1. Add the cream cheese, Greek yogurt, chives, dill, and pepper to a small bowl.
  2. Mix until the spread looks smooth, creamy, and evenly flecked with herbs.
  3. Coat one side of each bread slice with the cream cheese mixture.
  4. Arrange the cucumber slices over one prepared bread slice.
  5. Set the second bread slice on top with the creamy side facing the cucumber.
  6. Trim away the crusts, then cut the sandwich in half on the diagonal.

Notes

  • For the cleanest bite, slice the cucumber thinly with a sharp knife or mandoline.
  • Serve soon after assembling so the bread stays soft but not soggy.
  • The herb spread can be prepared ahead and chilled in an airtight container for up to 1 day.
  • For a bright twist, add 1/2 teaspoon lemon zest and 1 teaspoon lemon juice to the spread.
