8 oz pasta, such as spaghetti, linguine, or penne
1 tablespoon butter or olive oil
4 cloves garlic, finely minced
2 cups milk, preferably whole milk or any milk available
1 cup water, or enough to barely cover the pasta
¾ cup freshly grated Parmesan cheese
½ teaspoon salt, or adjust to taste
¼ teaspoon black pepper
1 teaspoon Italian seasoning
Optional: 2 tablespoons cream cheese or sour cream for a richer sauce
Optional: chopped parsley or basil for garnish
Instructions
Warm the butter or olive oil in a large pot or deep skillet over medium heat. Add the minced garlic and cook for 1–2 minutes, stirring often, until it smells fragrant.
Add the dry pasta, milk, and enough water to barely cover the noodles. Stir everything together and bring it to a soft boil.
Lower the heat and simmer uncovered for 8–10 minutes, stirring frequently, until the pasta is al dente and the liquid turns creamy.
Mix in the Parmesan cheese, salt, black pepper, and Italian seasoning. Stir until the cheese melts into a smooth sauce. Add cream cheese or sour cream, if using.
Finish with chopped parsley or basil and serve the pasta hot.
Notes
Stir the pasta often so it cooks evenly and does not stick to the bottom of the pan.
Add a small splash of milk or water if the sauce thickens before the pasta is tender.
Leftovers can be refrigerated in an airtight container for up to 3 days.
Reheat gently with extra milk or water to bring back the creamy texture.
Freezing is not recommended because the dairy sauce may separate.
