Avocado Toast with Egg on crispy sourdough with hot honey

Avocado Toast with Egg brings crisp sourdough, creamy avocado, grated egg, and a sweet little heat together fast.

Ingredients

  • 2 slices sourdough bread
  • 1 tablespoon light mayonnaise
  • 1 large ripe avocado
  • 1/2 lime
  • 1 teaspoon kosher salt
  • 1 hard-boiled egg
  • 1 tablespoon hot honey
  • 1 teaspoon red pepper flakes, optional

Instructions

  1. Coat both sides of each sourdough slice with a thin swipe of light mayonnaise.
  2. Set the bread in a frying pan and toast until the bottom turns golden, about 2 to 3 minutes. Turn and brown the second side.
  3. Scoop the avocado into a bowl, then mash it with the lime juice and kosher salt.
  4. Spoon the avocado mixture over the warm toasted bread.
  5. Drizzle hot honey across the avocado layer.
  6. Use a cheese grater to shave the hard-boiled egg over the toast.
  7. Add red pepper flakes if you like a little extra kick.
  8. Finish with a small extra drizzle of hot honey, if desired.

Notes

  • Sourdough is a strong choice because it holds the toppings well and still tastes soft inside.
  • French bread, pumpernickel, whole wheat, multigrain, or thick homemade white bread can also work nicely.
  • Butter, olive oil, avocado oil, or a similar oil may be used instead of mayonnaise for toasting.
