- 6 tablespoons unsalted butter, sliced into small pieces
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 3 eggs, at room temperature
- ¼ cup unsweetened cocoa powder
- ⅓ cup cornstarch
- ½ teaspoon salt
- 1 cup mini semi-sweet chocolate chips
- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 egg, at room temperature
- ½ teaspoon vanilla extract
- Heat the oven to 350°F.
- Coat a 9-inch square baking pan with cooking spray, then line it with parchment paper so the edges hang over the sides.
- Add the chocolate chips and butter to a large microwave-safe bowl. Warm in 30-second bursts, stirring after each one, until smooth.
- Mix in the ¾ cup sugar and 1 teaspoon vanilla until the batter looks glossy.
- Stir in the 3 eggs, adding one at a time and mixing well after each addition.
- In a separate bowl, combine the cocoa powder, cornstarch, and salt.
- Add the dry mixture to the chocolate mixture and stir firmly until the batter becomes smooth and pulls slightly from the bowl.
- Fold in the mini chocolate chips.
- Spread about two-thirds of the brownie batter into the prepared pan and level the surface.
- Beat the softened cream cheese until creamy and light.
- Add the 1/2 cup sugar and mix until blended.
- Beat in the remaining egg and ½ teaspoon vanilla until the cheesecake filling is smooth.
- Spoon the cheesecake mixture over the brownie layer and gently spread it evenly.
- Add the remaining brownie batter over the cheesecake layer in spoonfuls.
- Bake for 30 to 35 minutes, checking near 30 minutes, until a toothpick comes out with moist crumbs.
- Cool completely in the pan, then lift out with the parchment and cut into squares.
- Keep leftovers covered in the refrigerator.
Notes
- For a boxed mix version, prepare the brownie batter from the package first, then add the cheesecake layer and bake as directed.
