- 1/4 cup finely grated onion

- 2 cups prepared marinara sauce
- 4 hoagie rolls or sturdy sub buns

- Place the ground meat, breadcrumbs, egg, grated onion, garlic, Italian seasoning, salt, and black pepper in a large bowl. Fold everything together gently until evenly combined.
- Form the mixture into meatballs measuring about 1 to 1 1/2 inches across, then arrange them on the prepared pan.
- Bake the meatballs for 18 to 20 minutes, until browned and fully cooked. For a stovetop option, brown them in a skillet over medium heat, rotating them to cook each side.
- Heat the marinara in a wide saucepan until it begins to simmer softly. Add the cooked meatballs and let them cook in the sauce for 10 to 15 minutes.
- Slice each roll lengthwise while keeping one edge attached. Brush the bread with butter, if using, and toast it for 3 to 5 minutes until the surface feels lightly crisp.
- Divide the sauced meatballs among the rolls and spoon additional marinara over the filling.
- Scatter mozzarella over each sandwich and add a slice of provolone, if desired.
- Broil the assembled subs for 2 to 3 minutes, watching closely, until the cheese melts and develops bubbling spots.
- Finish with Parmesan and optional fresh basil or parsley, then serve while hot.
