- 1 lb (450 g) smoked kielbasa, sliced into ½-inch pieces
- 1 bag (32 oz / 900 g) frozen diced hash brown potatoes, thawed
- 1 can (10.5 oz / 295 g) condensed cream of chicken soup, or condensed cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese, divided
- ½ cup chopped green onions, or sautéed white onion
- ½ teaspoon garlic powder
- ½ teaspoon ground black pepper
- ½ teaspoon paprika
- 2 tablespoons melted butter
- Optional: 1 cup crushed cornflakes or Ritz crackers for the topping
- Set the oven to 350°F (175°C) and coat a 9×13-inch baking dish with grease.
- Mix the condensed soup, sour cream, 1½ cups cheddar, onion, garlic powder, black pepper, and paprika until smooth.
- Gently stir in the thawed diced potatoes until evenly covered with the creamy mixture.
- Fold the sliced kielbasa into the potato filling.
- Transfer the mixture to the prepared baking dish and spread it into an even layer.
- Sprinkle the remaining ½ cup cheddar across the surface.
- For a crisp topping, toss the melted butter with the crushed cornflakes or crackers, then scatter the crumbs over the cheese.
- Bake uncovered for 40–45 minutes, until the edges bubble and the top becomes golden.
- Rest the casserole for 5 minutes before portioning and serving.
Notes
- Thaw the diced hash browns before adding them to the creamy filling.
- The cornflake or cracker topping may be omitted.
- To prepare ahead, assemble and refrigerate the covered casserole for up to 24 hours. Allow an additional 5–10 minutes of baking time.
- Refrigerate cooled leftovers in a sealed container for up to 4 days.
