Spiced Peach Jam with Warm Fall Spices

SPICED PEACH JAM combines juicy peaches with cinnamon, allspice, and cloves for a chunky, fragrant spread with warm seasonal flavor.

Ingredients

  • 4 cups ripe peaches, peeled, pitted, chopped, and lightly crushed
  • 1 tablespoon lemon juice
  • 3 rounded tablespoons low-sugar pectin
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon ground cloves
  • 3 cups granulated sugar

Instructions

  1. Remove the peach skins and pits, then slice and chop the fruit. Gently mash the pieces while keeping some small chunks intact.
  2. Place a large pot over medium heat. Add the prepared peaches, lemon juice, low-sugar pectin, cinnamon, allspice, and cloves.
  3. Raise the heat to medium-high and stir as the fruit mixture heats. Bring it to a vigorous boil that continues bubbling while stirred, which takes about 20 minutes.
  4. While the peaches cook, measure the sugar into a separate bowl. Wash the jars with very hot water, fill them with hot water for 2-3 minutes, then drain them upside down on a clean towel.
  5. Pour all the sugar into the boiling peach mixture while stirring. Bring the jam back to a full rolling boil and cook for 5 minutes, stirring regularly to prevent scorching.
  6. Set the warm jars on paper towels or a clean kitchen towel. Funnel the hot jam into each jar, leaving minimal space without letting it overflow, then fasten the lids and rings carefully.

Notes

  • This batch fills 3 pint jars or 6 half-pint jars.
  • Measure the low-sugar pectin with rounded tablespoons for the intended consistency.
  • For a more pronounced peach taste, the cinnamon, allspice, and cloves may each be reduced by half.
  • Keep unprocessed jars refrigerated or frozen. A lid that pops after filling does not make the jam shelf-stable.
