- 1 cup oats
- 1 large apple, peeled and cut into chunks
- 3 tablespoons honey
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3 tablespoons yogurt
- 2 eggs
- 1 tablespoon butter or coconut oil
- Heat the oven to 180°C/350°F.
- Add the apple, honey, vanilla, cinnamon, baking soda, baking powder, yogurt, eggs, butter or coconut oil, and 3/4 of the oats to a blender. Blend until smooth, then stir in the remaining 1/4 of the oats.
- Cover a small baking pan with parchment paper, then spread the batter evenly inside.
- Bake for 20-30 minutes, checking that a toothpick inserted into the center comes out clean.
- Let the cake cool before cutting it into slices. Transfer the pieces to a sealed container and refrigerate for at least 1 hour before serving.
Notes
- If honey or maple syrup is unavailable, use about 3-4 tablespoons of dark brown sugar and taste the batter to check the sweetness.
- A smaller baking pan creates a taller, fluffier cake.
- The texture and flavor become even better after the sliced cake has chilled.
