- 3/4 cup radishes, cut into very thin slices
- 4 medium green onions, thinly cut (1/2 cup)
- 3 tablespoons unseasoned rice vinegar
- 2 tablespoons toasted sesame oil
- 2 tablespoons toasted sesame seeds
- 1 tablespoon freshly squeezed lime juice
- 1/4 teaspoon crushed red chile flakes
- 1/4 teaspoon salt
- 2 cups frozen shelled edamame, fully thawed
- 1 medium avocado, cut into cubes
- Juice from 1/2 medium lime
- 12 ounces cooked peeled shrimp
- Combine the cabbage-and-carrot blend, sliced radishes, and green onions in a large mixing bowl.
- In a separate small bowl, whisk the rice vinegar with the toasted sesame oil, sesame seeds, lime juice, chile flakes, and salt.
- Pour the sesame dressing over the vegetables and turn gently until the slaw is evenly coated.
- Add the thawed edamame and fold it through the dressed slaw.
- Place the avocado cubes in a small bowl, drizzle them with the juice from half a lime, and toss carefully.
- Distribute the slaw mixture evenly between 4 bowls or meal-prep containers.
- Finish each portion with one-quarter of the shrimp, about 3 ounces, and one-quarter of the lime-coated avocado.
- Serve at once or cover the containers and refrigerate them until mealtime.
Notes
- For the crunchiest texture, chill the undressed cabbage mixture and sesame dressing in separate sealed containers.
- If the bowls will not be eaten within 4 hours, add the dressing immediately before serving.
- When using frozen precooked shrimp, leave it frozen until close to serving time, then thaw it safely in the refrigerator.
