  • For the cinnamon-maple apples
  • 1 tablespoon butter, unsalted
  • ¼ teaspoon kosher salt
  • 1 teaspoon ground cinnamon, adjusted to taste
  • 1 tablespoon pure maple syrup
  • 2 large Honeycrisp apples, cut into small chunks, peeled or unpeeled
  • For the oatmeal
  • 1.5 cups whole milk, or another preferred milk
  • 1.5 cups water
  • ¼ teaspoon kosher salt
  • 12 tablespoons packed brown sugar, adjusted to taste
  • 1 cup old-fashioned rolled oats
  • 2 tablespoons chia seeds, optional
  • 1.5 teaspoons ground cinnamon, adjusted to taste
  • 2 teaspoons pure vanilla extract

Instructions

  1. Warm the unsalted butter in a small saucepan until melted. Mix in the maple syrup, ¼ teaspoon kosher salt, and 1 teaspoon cinnamon.
  2. Add the chopped apples and coat them in the spiced butter mixture. Cook for several minutes, stopping when the fruit is slightly tender but still holds its shape. Move the pan off the heat.
  3. While the apples soften, combine the water, milk, and remaining ¼ teaspoon kosher salt in a Dutch oven or roomy saucepan. Heat over medium-low until the liquid reaches a mild boil.
  4. Add the brown sugar and stir until no crystals remain.
  5. Pour in the rolled oats and optional chia seeds. Maintain a low simmer for 5-10 minutes, stirring now and then as the mixture thickens.
  6. Blend in the vanilla extract, 1.5 teaspoons cinnamon, and roughly half of the cooked apples. Keep the remaining fruit for the topping.
  7. Cook for another 3-5 minutes, or until the oatmeal has the thickness you prefer.
  8. Spoon the oatmeal into bowls. Finish with the reserved apples, extra cinnamon, and a small pour of milk or cream, if desired.

Notes

  • Keeping the apple skin adds color and texture, though peeling is also an option.
  • Cut the apples into bite-sized chunks and remove them from the heat before they become soft enough to fall apart.
  • Once the milk and water begin to bubble gently, lower the temperature. Stir regularly to protect the milk from scorching.
  • Cooking time can change when using oats other than old-fashioned rolled oats, so consult the directions on the package.
  • Stir in additional milk or water when the oatmeal becomes thicker than desired.
  • Refrigerate cooled leftovers in a sealed container for 4-5 days. Warm them slowly in the microwave or on the stovetop. Freezing is not advised because it can damage the texture.
