High Protein Breakfast Bowls for Easy Meal Prep

High Protein Breakfast Bowls with scrambled eggs, bacon, avocado, tomatoes, Greek yogurt, and crispy hash browns

High Protein Breakfast Bowls layer creamy scrambled eggs, crisp bacon, melted cheese, fresh vegetables, avocado, hash browns, and a cool yogurt topping.

Ingredients

  • Butter: 1 tablespoon
  • Eggs: 6
  • Bacon: 3 slices, cut into small pieces
  • Cheese: 1/2 cup, shredded
  • Tomatoes: 1/4 cup, chopped
  • Green onions: 2, thinly cut
  • Fresh cilantro: 2 tablespoons, chopped
  • Small ripe avocado: 1, sliced
  • Salt and black pepper: add to taste
  • Hash brown patties: 2, optional
  • Greek yogurt or sour cream: 2 tablespoons
  • Salsa or hot sauce: optional, for serving

Instructions

  1. Warm a skillet over medium heat. Add the bacon pieces and cook until browned and crisp, then transfer them to a plate.
  2. Place the hash brown patties on a parchment-lined baking sheet and prepare them as directed on the package. For an air-fryer option, arrange them in one layer and cook at 400°F for 8–10 minutes.
  3. Crack the eggs into a bowl, season with salt and pepper, and whisk until evenly blended.
  4. Pour the eggs into the skillet. Fold them gently with a spatula until soft curds form and they reach your preferred doneness, about 2–3 minutes.
  5. Blend the butter and shredded cheese into the warm eggs, letting the cheese soften and melt.
  6. Distribute the scrambled eggs among 3 bowls, then add the crisp bacon and optional hash brown patties.
  7. Finish each bowl with avocado, Greek yogurt or sour cream, green onions, tomatoes, and cilantro.
  8. Serve with salsa or hot sauce for an extra burst of flavor.

Notes

  • The listed nutrition values exclude the optional hash brown patties.
  • Bacon may be replaced with pork sausage, turkey sausage, regular chorizo, or soy chorizo.
  • For meal prep, package the eggs, bacon, and hash browns without the fresh garnishes. Keep the toppings in separate containers.
  • Microwave the cooked portion for 2–3 minutes, then add the chilled toppings before serving.
  • Avocado, green onions, Greek yogurt, sour cream, salsa, and fresh fruit all pair well with these bowls.
  • Nutritional figures are calculated estimates and may vary with the ingredients used.
