Amazing 65-Minute Moist Pumpkin Bread

Pumpkin Bread is a tender, warmly spiced quick bread made with real pumpkin puree and honey or pure maple syrup.

  • 6 tablespoons unsalted butter, melted
  • 1 cup canned pumpkin puree, not pumpkin pie filling
  • 1/2 cup honey or pure maple syrup
  • 2 large eggs
  • 1/4 cup milk of choice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups white whole wheat flour, whole wheat flour, or all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Instructions

  1. Heat the oven to 350°F and coat a 9-by-5-inch loaf pan with cooking spray.
  2. Place the melted butter in a large bowl. Whisk in the pumpkin puree and honey or maple syrup until smooth.
  3. Whisk the eggs, milk, and vanilla into the pumpkin mixture until evenly blended.
  4. In a separate medium bowl, combine the flour, baking soda, baking powder, salt, cinnamon, allspice, nutmeg, and cloves.
  5. Add the dry mixture to the wet mixture. Fold with a rubber spatula just until no dry flour remains; do not overmix.
  6. Spread the batter in the prepared pan. Bake for 50 to 55 minutes, until a tester inserted into the center comes out clean.
  7. Cool the loaf in its pan on a wire rack for 15 minutes. Remove it from the pan and cool completely before slicing.

Notes

  • Store the cooled loaf airtight at room temperature for up to 3 days, refrigerated for up to 5 days, or frozen for up to 3 months.
  • For 12 standard muffins, bake the divided batter for 15 to 18 minutes.
  • Chocolate chips, chopped nuts, or fresh or dried cranberries may be folded into the batter.
