Instructions

  1. Boil the diced squash until very tender, about 12 to 15 minutes. Remove it with a slotted spoon and retain the cooking water.
  2. Heat 3 tablespoons olive oil in a skillet and fry the sage leaves for about 30 seconds. Transfer the leaves to a paper towel.
  3. Cook the pasta in the squash water until al dente, then reserve some water and drain. Blend the squash with the measured water or vegetable broth until smooth.
  4. Warm the remaining tablespoon of olive oil in a large skillet. Cook onion and garlic for 3 to 5 minutes, then add the squash puree, Parmesan, nutmeg, salt, and pepper.
  5. Add the drained pasta and toss until coated. Chop two fried sage leaves into the pasta and garnish with the remaining crisp leaves.
