Instructions

  1. Heat the oven to 400°F and line a baking sheet. Halve and seed the pumpkin, oil and season the cut sides, and roast cut-side down for 40 to 60 minutes until very soft.
  2. Cool enough to handle, remove the skin, and measure 4 1/2 packed cups of cooked flesh.
