Instructions

  1. Whisk crust flour and salt. Work in shortening until crumbly, then cut in cold butter until dime-size flakes remain. Add ice water gradually until the dough holds together. Fold a few times, divide into two disks, wrap, and chill 30 minutes.
  2. Heat the oven to 425°F and lightly grease a deep 9-inch pie pan. Toss sliced apples with lemon juice. Whisk filling sugar, flour, cornstarch, salt, cinnamon, nutmeg, and allspice; coat the apples, then stir in optional apple concentrate and vanilla.
  3. Roll one dough disk into a 12-inch round and line the pan with a 1-inch overhang. Spoon in the apple filling and dot with diced butter.
  4. Roll the second disk to 12 inches, cover the pie, seal and crimp the edges, and cut generous steam vents. Chill 10 minutes, then brush with optional wash and sprinkle with coarse sugar.
  5. Set the pie on a parchment-lined baking sheet. Bake 20 minutes at 425°F, reduce to 375°F, and bake about 40 minutes more until the crust is golden and the filling bubbles vigorously. Cool completely before slicing.
