Ingredients

Scale
  • 1 pound ground turkey
  • 1/3 cup plain pumpkin puree
  • 1/4 cup panko breadcrumbs
  • 1 large egg
  • 1/8 teaspoon ground cloves
  • 1 to 2 tablespoons minced fresh sage
  • Salt and black pepper, to taste
  • Olive oil, for the skillet
  • Pumpkin or harvest-blend pasta sauce, as needed to coat
  • Freshly shredded Parmesan cheese, for serving
  • Additional minced sage, for serving

Instructions

  1. Heat the oven to 425°F and line a rimmed baking sheet with parchment paper.
  2. Combine turkey, pumpkin puree, panko, egg, cloves, sage, salt, and black pepper in a large bowl. Mix gently just until evenly distributed.
  3. Portion 1 1/2 to 2 tablespoons of mixture for each meatball, roll lightly, and arrange with space between them on the prepared sheet.
  4. Bake for 15 minutes, until lightly browned. Warm a thin film of olive oil in a nonstick skillet, transfer in the meatballs, and pour in enough pumpkin pasta sauce to coat them.
  5. Simmer for about 5 minutes until the sauce is hot and the center of every meatball reaches 165°F. Finish with Parmesan and additional sage.

Notes

  • Keep the turkey cold until mixing so the soft pumpkin mixture is easier to portion.
  • Mix with a light hand and stop as soon as the ingredients are evenly combined.
  • Use a scoop for uniform meatballs that finish cooking at the same time.
