Pumpkin Bread combines seasonal ingredients in an approachable baking recipe with a carefully controlled texture. The independently written steps preserve the verified quantities, yield, and timing while giving home cooks clear cues for serving the finished dish.

Ingredients

Scale
  • 2 cups all-purpose flour, spooned and leveled
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 3/4 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 (15-ounce) can pure pumpkin purée

Instructions

  1. Heat the oven to 325°F with a rack in the middle. Grease and flour two 8-by-4-inch loaf pans.
  2. Whisk flour, salt, baking soda, baking powder, cloves, cinnamon, and nutmeg until evenly combined.
  3. Beat softened butter and sugar on medium speed until blended. Add eggs one at a time, beating well, then continue until pale and fluffy. Mix in pumpkin; a slightly curdled appearance is normal.
  4. Add the flour mixture and mix on low only until no dry flour remains. Divide batter evenly between the pans and smooth the tops.
  5. Bake 65 to 75 minutes until the loaves are domed and a tester in the center comes out clean or with a few moist crumbs.
  6. Cool in the pans 10 minutes, then turn the loaves onto a rack and cool completely before slicing.

Notes

  • Spoon flour into the cup and level it rather than packing it down.
  • Beat the butter, sugar, and eggs long enough to become light before pumpkin is added.
  • Stop mixing promptly after adding flour to avoid a tough crumb.
