Instructions

  1. Heat the oven to 425°F. Line or lightly grease a 12-cup muffin pan.
  2. Whisk flour, baking soda, cinnamon, pumpkin pie spice, ginger, and salt in a large bowl.
  3. In another bowl, whisk oil, granulated sugar, brown sugar, pumpkin, eggs, and milk until uniform.
  4. Pour wet ingredients into dry and fold gently just until no flour pockets remain. Divide batter among the cups, filling each to the top, and add optional coarse sugar.
  5. Bake 5 minutes at 425°F without opening the door. Reduce the oven to 350°F and bake 16 to 17 minutes more until a center tester comes out clean.
  6. Cool muffins in the pan 5 minutes, then move them to a rack.

  • Fill the cups to the top because the initial high heat is designed to create tall domes.
