  • 1/2 tablespoon butter
  • 2 ribs celery, diced
  • 34 large carrots, diced
  • 1 clove garlic, minced
  • 10 cups chicken stock or broth
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon dried rosemary
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon crushed red pepper flakes
  • 4 cups dry egg noodles or bite-size pasta
  • 3 cups shredded rotisserie chicken
  • 1 teaspoon chicken bouillon base, as needed

Instructions

  1. Melt butter in a large pot over medium-high heat. Add celery and carrots and saute for 3 minutes. Add garlic and cook 30 seconds.
  2. Pour in the stock and season with salt, pepper, rosemary, thyme, and red pepper flakes. Taste, then add bouillon only if the broth needs more depth.
  3. Bring to a boil. Add the noodles and cook only until al dente, following their package timing.
  4. Remove the pot from the heat as soon as the noodles are barely tender; they continue softening in the hot broth.
  5. Stir in the shredded chicken and warm through. Taste once more and adjust salt and pepper before serving.

Notes

  • A flavorful stock is the foundation, so season only after tasting.
  • Pull the pot from the heat while the noodles still have a little bite.
  • For planned leftovers, cook noodles separately and add them to each bowl.
