- 2 ounces cream cheese, softened to room temperature
- 1 tablespoon low-fat plain Greek yogurt
- 1 tablespoon fresh chives, thinly sliced
- 1 tablespoon fresh dill, chopped
- ¼ teaspoon ground pepper
- 2 slices whole-wheat sandwich bread
- ⅓ cup English cucumber, sliced very thin
- Add the cream cheese, Greek yogurt, chives, dill, and pepper to a small bowl.
- Mix until the spread looks smooth, creamy, and evenly flecked with herbs.
- Coat one side of each bread slice with the cream cheese mixture.
- Arrange the cucumber slices over one prepared bread slice.
- Set the second bread slice on top with the creamy side facing the cucumber.
- Trim away the crusts, then cut the sandwich in half on the diagonal.
Notes
- For the cleanest bite, slice the cucumber thinly with a sharp knife or mandoline.
- Serve soon after assembling so the bread stays soft but not soggy.
- The herb spread can be prepared ahead and chilled in an airtight container for up to 1 day.
- For a bright twist, add 1/2 teaspoon lemon zest and 1 teaspoon lemon juice to the spread.
