Ingredients

Scale
  • 1/3 cup whole milk
  • 2 tablespoons unsalted butter
  • 1/2 cup plain pumpkin puree
  • 1/4 cup granulated sugar
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 large egg
  • 2 1/4 teaspoons instant or active dry yeast
  • 2 2/3 cups all-purpose flour, plus more as needed
  • 6 tablespoons unsalted butter, softened
  • 1/2 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon each ground nutmeg and allspice
  • 1/4 teaspoon each ground ginger and cloves
  • 4 ounces cream cheese, softened
  • 3 tablespoons pure maple syrup
  • 1 tablespoon whole milk
  • 2/3 cup confectioners sugar, sifted
  • Optional: 1/8 teaspoon ground cinnamon

Instructions

  1. Warm the milk with 2 tablespoons butter until the butter just melts; cool to 105-115 F. Whisk pumpkin, sugar, nutmeg, and salt, then whisk in the milk mixture, egg, and yeast.
  2. Mix in 1 cup flour for 1 minute, then add the remaining 1 2/3 cups. Knead for 5 minutes, adding flour only by the teaspoon until the dough is soft and slightly tacky.
  3. Place in a lightly greased bowl, cover, and let rise about 2 hours, until doubled.
  4. Roll to a 10 x 14-inch rectangle. Spread with softened butter and sprinkle with brown sugar mixed with the spices. Roll tightly, cut into 10-12 pieces, and place in a greased baking dish.
  5. Cover and let rise about 1 hour, until doubled. Heat the oven to 350 F.
  6. Bake 22-28 minutes, tenting loosely with foil after 15 minutes if browning quickly. Cool 10 minutes.
  7. Beat cream cheese smooth; beat in maple syrup and milk, then confectioners sugar and optional cinnamon. Spread over the warm rolls.

Notes

  • Keep the milk mixture warm, not hot, so the yeast stays active.
  • A slightly tacky dough makes softer rolls; avoid adding unnecessary flour.
  • The shaped rolls can be refrigerated up to 14 hours before their second rise.
