Frozen Yogurt Granola Cups

These Frozen Yogurt Granola Cups are cool, creamy freezer treats with a chewy oat base, sweet yogurt filling, and fresh berry topping.

Ingredients

  • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 34 tbsp honey, depending on how sweet you want the cups
  • 1 tsp vanilla extract
  • 1 1/2 cups Greek yogurt
  • Berries of choice, for topping

Instructions

  1. Combine the oats, cinnamon, almond butter, honey, and vanilla extract in a bowl. Stir until the mixture becomes sticky and holds together like a soft dough.
  2. Place muffin liners in a muffin pan. Add a spoonful of the oat mixture to each liner, then press it down firmly to form the base.
  3. Spoon Greek yogurt over each oat base. Finish with berries and any extra bits of the oat mixture.
  4. Freeze the cups for at least 4 hours, or until fully set. Let them soften slightly before serving.

Notes

  • Plain or flavored Greek yogurt both work well.
  • When using plain Greek yogurt, stir in 1/2 tsp vanilla extract and sweeten with honey or maple syrup to taste.
  • Keep the cups stored in the freezer.
