Creamy Cajun Sausage Pasta served with Parmesan and parsley

A cozy Cajun Sausage Pasta with tender penne, smoky sausage, colorful peppers, and a creamy spiced sauce for an easy weeknight meal.

Ingredients

Scale
  • 8 oz penne pasta
  • 12 oz smoked Cajun sausage, cut into slices
  • 1 cup diced red and yellow bell peppers
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, finely minced
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped for topping

Instructions

  1. Chop the onion and bell peppers, mince the garlic, and slice the smoked sausage before you start cooking.
  2. Bring salted water to a boil, cook the penne until al dente, then drain it well.
  3. Warm olive oil in a large skillet over medium heat. Cook the onion until softened, then add the peppers and garlic until they smell fragrant.
  4. Add the sliced Cajun sausage to the skillet and cook until the edges turn lightly browned.
  5. Pour in the heavy cream, sprinkle in the Cajun seasoning, and let the sauce gently simmer until it thickens a little.
  6. Add the drained pasta to the skillet and toss until the sauce coats every piece. Serve warm with Parmesan cheese and fresh parsley.

Notes

  • Cook the pasta just until al dente so it holds its shape in the creamy sauce.
  • Taste the sauce before serving, since Cajun seasoning blends can vary in salt and heat.
  • For leftovers, reheat gently with a splash of milk or broth to bring back the creamy texture.
