Chicken with Buttered Noodles is a cozy skillet dinner with juicy chicken, tender egg noodles, garlic, broth, and a rich buttery finish.

  • 4 boneless, skinless chicken breasts, about 1.5 lbs
  • 8 oz egg noodles
  • 4 tbsp real butter
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • ¼ cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Mince the garlic and chop the parsley before you begin cooking.
  2. Warm a large skillet over medium-high heat, then melt 1 tablespoon of butter in the pan.
  3. Season the chicken breasts with salt and pepper. Place them in the hot skillet and cook for about 5 minutes on each side, until nicely browned.
  4. Add the minced garlic and cook for about 1 minute, stirring until it smells fragrant.
  5. Pour the chicken broth into the skillet and bring it to a boil.
  6. Add the egg noodles and cook for 8–10 minutes, stirring occasionally, until the noodles are al dente.
  7. Take the skillet off the heat and stir in the remaining butter until it melts into the noodles.
  8. Scatter fresh parsley over the top and serve warm.

Notes

  • Stir the noodles occasionally so they cook evenly in the broth.
  • Add a small splash of broth when reheating if the noodles have absorbed too much sauce.
  • Serve with a crisp salad, roasted vegetables, or warm bread.
