- 4 boneless, skinless chicken breasts, about 1.5 lbs
- 8 oz egg noodles
- 4 tbsp real butter
- 4 cloves garlic, minced
- 2 cups low-sodium chicken broth
- ¼ cup fresh parsley, chopped
- Salt and pepper to taste
- Mince the garlic and chop the parsley before you begin cooking.
- Warm a large skillet over medium-high heat, then melt 1 tablespoon of butter in the pan.
- Season the chicken breasts with salt and pepper. Place them in the hot skillet and cook for about 5 minutes on each side, until nicely browned.
- Add the minced garlic and cook for about 1 minute, stirring until it smells fragrant.
- Pour the chicken broth into the skillet and bring it to a boil.
- Add the egg noodles and cook for 8–10 minutes, stirring occasionally, until the noodles are al dente.
- Take the skillet off the heat and stir in the remaining butter until it melts into the noodles.
- Scatter fresh parsley over the top and serve warm.
Notes
- Stir the noodles occasionally so they cook evenly in the broth.
- Add a small splash of broth when reheating if the noodles have absorbed too much sauce.
- Serve with a crisp salad, roasted vegetables, or warm bread.
